Ingredients

  • 1 large sweet potato
  • 2 Alaska pollock fillets
  • 2 Tbsp olive oil
  • 4 lemon slices
  • 2 Tbsp flaked almonds
  • 2 Tbsp flat-leaf parsley
  • salt and pepper

Preparation

  1. Step 1 Prep the sweet potato

    Peel the sweet potato and cut into pieces. Steam with a little water for about 30 minutes.

  2. Step 2 Bake the fish

    Preheat the oven to 350 °F. If preferred, use an Air Fryer at this step. Place the pollock fillets on a baking tray lined with baking paper. Drizzle with olive oil and place two lemon slices on each. Season with salt and pepper. Place in the oven for 10 minutes.

  3. Step 3 Finish and plate

    While the fish is cooking, toast the almonds in a pan for a few minutes. When the sweet potato is done, mash it with a fork on a plate. Season with salt and pepper. Finely chop the parsley.

    Arrange the plate with the sweet potato puree in the center, place the Alaska pollock on top and spoon it on, sprinkling with almonds and parsley. Serve,
